Greens #2
Ingredients: Shallots, Yu Choi, Dandelion Greens, Shredded Zucchini. Ghee to cook with, Veggie Soup Base for seasoning, plus Sea Salt.
Instructions: Heat 1/2 tsp. Ghee in an iron skillet. When hot, add and sautee shallots. When translucent, add in the greens (I chopped everything, but decided to shred the Zucchini for fun!) They should cook within minutes. Stir in a pea size of the soup base and sea salt to taste!

| Yu Choi- This is sort of an Asian variation on Spinach. I just think of it as "greens that are healthy for me." Available at Asian Markets. |

| Better than Bouillon Vegetable Soup Base. This is a recent discovery for me- It's great for seasoning almost anything! Plus I love using it in any soup. Available at health food stores. |
